Modakam (Ukadiche Modak)

Lord Ganesha's most beloved sweet prepared with rice flour covering and coconut-jaggery filling.

Ingredients
  • 1 cup rice flour
  • 1¼ cups water
  • 1 tsp ghee
  • Pinch of salt
  • 1 cup grated coconut
  • ¾ cup grated jaggery
  • ½ tsp cardamom powder
Preparation

Heat jaggery until it melts, add coconut and cardamom. Boil water with salt and ghee, add rice flour, knead dough. Shape cups, fill with mixture, seal, and steam for 12 minutes.

Undrallu
Undrallu

Steamed rice flour dumplings traditionally offered during Vinayaka Chavithi.

Ingredients
  • 1 cup rice flour
  • 2½ cups water
  • 2 tbsp soaked chana dal
  • 1 tsp ghee
  • Salt
Preparation

Boil water with salt and ghee, add chana dal, mix rice flour, knead dough, roll balls, steam 15 minutes.

  • 1 cup rice
  • 4 cups milk
  • 1 cup jaggery
  • Cashews, Raisins, Ghee, Cardamom
Preparation

Cook rice in milk, melt jaggery, mix, fry nuts, add cardamom, combine.

Ingredients
  • 3 cups cooked rice
  • Tamarind pulp
  • 2 tbsp peanuts
  • Mustard seeds, Chana dal, Urad dal
  • Curry leaves, Green & Dry red chillies
  • Turmeric, Hing, Salt, Oil
Preparation

Soak tamarind and extract pulp. Heat oil, add mustard seeds, peanuts, dals, curry leaves, chillies, turmeric, hing. Add tamarind pulp, cook until thick. Mix with rice.
